Hearty Lentil and Barley Soup

Ingredients
  • 1 cup dried brown lentils
  • 1/2 cup pearled barley
  • 1 medium yellow onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cups vegetable broth
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
Instructions
  1. Rinse the lentils and barley in a fine-mesh sieve.
  2. In a large pot over medium heat, sauté the onion, carrots, and celery in a little olive oil until softened.
  3. Add the lentils, barley, oregano, and thyme to the pot. Stir to combine.
  4. Add the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 30 minutes, or until the lentils and barley are tender.
  5. Season with salt and pepper to taste.
  6. Serve hot and enjoy!
