Spicy Chickpea and Potato Curry

One of the curries that we had was a chickpea and potato curry that was so delicious that I couldn't stop thinking about it. When I got back home, I decided to try and recreate the curry myself. After a few tries, I finally came up with a recipe that I was happy with. The recipe is easy to make and the curry is just as delicious as the one I had in India.

Ingredients
  • 1 tbsp coconut oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger-garlic paste
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 2 cups diced potatoes
Instructions
  1. Heat the coconut oil in a large skillet over medium heat.
  2. Add the onion and cook until softened, about 5 minutes.
  3. Add the garlic, ginger-garlic paste, cumin, coriander, turmeric, and red chili powder and cook for 1 minute, until fragrant.
  4. Stir in the chickpeas and potatoes and cook for 5 minutes, stirring occasionally.
  5. Add 1 cup of water and bring to a boil.
  6. Reduce heat to low, cover, and simmer for 15 minutes, or until the potatoes are tender.
  7. Season with salt and pepper to taste.
  8. Garnish with cilantro and serve with rice or naan.
