Ingredients
  • 1 can (13 ounces) full-fat coconut milk
  • 1/2 cup creamy peanut butter
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • 2 tablespoons almond milk
  • 1 tablespoon maple syrup
  • 1/4 teaspoon vanilla extract
Instructions
  1. In a blender, combine the coconut milk, peanut butter, maple syrup, and vanilla extract. Blend until smooth and creamy.
  2. Pour the ice cream base into a freezer-safe container and freeze for at least 4 hours, or until firm.
  3. Once the ice cream is firm, make the chocolate and peanut butter swirls. In a small bowl, whisk together the cocoa powder, almond milk, maple syrup, and vanilla extract.
  4. Remove the ice cream from the freezer and spoon it into a large bowl. Drizzle the chocolate and peanut butter swirls over the ice cream and use a spoon or knife to swirl them together.
  5. Return the ice cream to the freezer and freeze for at least 2 hours more, or until firm.
  6. When ready to serve, scoop the ice cream into bowls and enjoy!
  7. If the ice cream is too hard, let it soften at room temperature for a few minutes before scooping.
