Spiced Peach and Apricot Pie
This is a vegan peach and apricot pie recipe. It uses coconut sugar instead of refined sugar, and has a delicious blend of spices. The pie is baked until the crust is golden brown and the filling is bubbling. Let cool for at least 30 minutes before serving.
This recipe is a variation on a classic peach pie, but with the addition of apricots and a blend of spices. I first came up with this recipe when I was looking for a way to use up some ripe peaches and apricots that I had on hand. I decided to add some spices to the filling to give it a bit of a kick, and the result was a delicious and flavorful pie. I've been making this pie for years now, and it's always a hit with my family and friends.

Why It Works
  • The coconut sugar gives the pie a slightly caramelized flavor.
  • The blend of spices, including cinnamon, nutmeg, and cloves, gives the pie a warm and inviting flavor.
  • The cornstarch thickens the filling, giving it a smooth and creamy texture.
  • The pie is baked until the crust is golden brown and the filling is bubbling, ensuring that the crust is cooked through and the filling is hot and delicious.
