Ingredients
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1/4 cup lemon juice
  • 1/4 cup apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup olive oil
  • 1/4 cup water
Instructions
  1. Place the chickpeas, lemon juice, apple cider vinegar, Dijon mustard, salt, and pepper in a blender or food processor and blend until smooth.
  2. With the motor running, slowly drizzle in the olive oil and water until the mayonnaise is emulsified and creamy.
  3. Taste and adjust seasonings as needed.
  4. Transfer the mayonnaise to a jar or container and refrigerate for at least 2 hours before serving.
