Dosa
The most famous Indian bread, this version is made with lentils and rice and cooked to a delicate crisp

Ingredients
- 1 cup (250g) urad dal
- ½ cup (125g) basmati rice
- 1 teaspoon salt
- 1 tablespoon vegetable oil, plus extra to oil the pan
- ¼ cup chopped coriander (cilantro) leaves
Instructions
- Soak the urad dal and rice in plenty of water overnight.
- Drain the dal and rice and grind them to a smooth paste with the salt and a little water.
- The batter should be thick enough to coat the back of a spoon.
- Cover the batter and leave it to ferment in a warm place for 8–12 hours.
- Heat the oil in a nonstick frying pan and pour in a ladleful of batter.
- Spread the batter out to form a thin circle.
- Cook for 2–3 minutes on each side, or until golden brown.
- Fold in half and serve with chutney or sambar.
