Dosa
The most famous Indian bread, this version is made with lentils and rice and cooked to a delicate crisp

Ingredients
  • 1 cup (250g) urad dal
  • ½ cup (125g) basmati rice
  • 1 teaspoon salt
  • 1 tablespoon vegetable oil, plus extra to oil the pan
  • ¼ cup chopped coriander (cilantro) leaves
Instructions
  1. Soak the urad dal and rice in plenty of water overnight.
  2. Drain the dal and rice and grind them to a smooth paste with the salt and a little water.
  3. The batter should be thick enough to coat the back of a spoon.
  4. Cover the batter and leave it to ferment in a warm place for 8–12 hours.
  5. Heat the oil in a nonstick frying pan and pour in a ladleful of batter.
  6. Spread the batter out to form a thin circle.
  7. Cook for 2–3 minutes on each side, or until golden brown.
  8. Fold in half and serve with chutney or sambar.
