Ingredients
  • 3 ripe bananas, mashed
  • 3 eggs
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 1 1/2 cups almond flour
  • 1/2 cup coconut flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • Pinch of salt
Instructions
  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine mashed bananas, eggs, coconut oil, honey, and vanilla extract.
  3. Add almond flour, coconut flour, baking soda, cinnamon, and salt. Mix until well combined.
  4. In a small bowl, mix together 2 tbsp of coconut flour, 1 tbsp of cinnamon, and 1 tbsp of honey to create the cinnamon swirl mixture.
  5. Pour half of the banana bread batter into the loaf pan. Sprinkle half of the cinnamon swirl mixture on top. Repeat with the remaining batter and swirl mixture.
  6. Use a knife to swirl the cinnamon mixture into the batter.
  7. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the banana bread to cool before slicing and serving.
