Ingredients
  • 1 3/4 cups (218g) semolina flour
  • 1 1/2 cups (300g) granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup (240ml) olive oil
  • 1 cup (240ml) orange juice
  • 4 large eggs
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch baking pan.
  2. In a large bowl, whisk together the semolina flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the olive oil, orange juice, and eggs.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. While the cake is baking, make the orange glaze by whisking together 1 cup (120g) of powdered sugar and 2 tablespoons of orange juice.
  7. Once the cake is done, let it cool for a few minutes before pouring the glaze over the top.
  8. Let the glaze set for at least 30 minutes before serving.
