This tropical island tofu scramble is a delicious and easy way to start your day. The tofu is crumbled and cooked until browned, then combined with chopped onion, bell pepper, mango, pineapple, nutritional yeast, turmeric, and black pepper. The scramble is cooked until the fruit is heated through, and then served immediately.
I developed this recipe after a trip to the Caribbean. I was inspired by the fresh fruit and spices that I encountered there. I wanted to create a dish that would capture the flavors of the islands, and this tofu scramble is the result. It's a healthy and delicious way to start your day, and it's also a great way to use up leftover fruit.

Why It Works
The tofu is crumbled and cooked until browned, which gives it a slightly crispy texture.
The chopped onion and bell pepper add sweetness and crunch to the scramble.
The mango and pineapple add a tropical sweetness to the scramble.
The nutritional yeast adds a cheesy flavor to the scramble.
The turmeric and black pepper add a bit of spice to the scramble.
