Ingredients
1 head of cauliflower, chopped
1/2 cup olive oil
1/2 cup pesto sauce
1 cup shredded mozzarella cheese
1 cup roasted Brussels sprouts
1/4 cup red onion, thinly sliced
1/4 cup pine nuts
Salt and pepper to taste
Instructions
Preheat oven to 425 degrees F (220 degrees C).
Toss cauliflower with olive oil, salt, and pepper.
Spread cauliflower on a baking sheet and roast for 20 minutes, or until golden brown.
Spread pesto sauce over the roasted cauliflower.
