Ingredients
  • 1 large zucchini, cut into 1/2-inch cubes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (28-ounce) can diced tomatoes
  • 1 (15-ounce) can tomato sauce
  • 1/2 cup vegetable broth
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
Instructions
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large skillet, cook the zucchini, onion, and garlic over medium heat until the vegetables are tender.
  3. Stir in the diced tomatoes, tomato sauce, vegetable broth, Parmesan cheese, salt, and pepper.
  4. Bring to a simmer and cook for 5 minutes, or until the sauce has thickened.
  5. Transfer the mixture to a 9x13-inch baking dish.
  6. Bake for 20 minutes, or until the casserole is bubbly and hot.
