Ingredients
  • 1 cup all-purpose gluten-free flour
  • 1/2 cup unsalted butter, cubed and chilled
  • 1 large egg, beaten
  • 1 pound fresh figs, sliced
  • 1 pound fresh apricots, sliced
  • 1/2 cup granulated sugar
  • 1/4 cup honey
  • 1 tablespoon lemon juice
  • 1/4 teaspoon ground cinnamon
Instructions
  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. In a large bowl, combine the flour and butter. Use your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
  3. Add the egg and mix until the dough just comes together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  4. On a lightly floured surface, roll out the dough to a 12-inch circle. Transfer the dough to a 9-inch tart pan with removable bottom and trim the edges.
  5. In a large bowl, combine the figs, apricots, sugar, honey, lemon juice, and cinnamon. Toss to coat.
  6. Spread the fruit mixture over the bottom of the tart crust.
  7. Bake the tart for 45-50 minutes, or until the crust is golden brown and the fruit is bubbling and caramelized.
  8. Let the tart cool for at least 30 minutes before serving.
