Ingredients
  • 1 cup dried brown lentils
  • 1 butternut squash (about 2 pounds), peeled and cubed
  • 1 pound Brussels sprouts, trimmed and halved
  • 1 pound carrots, peeled and chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/2 teaspoon dried thyme
Instructions
  1. Rinse the lentils and pick out any debris.
  2. In a large pot or Dutch oven over medium heat, sauté the onion and garlic in a little bit of oil until softened.
  3. Add the butternut squash, carrots, and Brussels sprouts to the pot and cook for 5-7 minutes, or until they begin to soften.
  4. Stir in the lentils, vegetable broth, and thyme.
  5. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until the lentils are tender and the vegetables are cooked through.
  6. Season with salt and pepper to taste.
  7. Serve warm and enjoy!
