Ingredients
1 cup quinoa, rinsed and drained
2 tablespoons olive oil
1/2 cup chopped onion
1/2 cup chopped bell pepper (any color)
2 cloves garlic, minced
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions
Heat olive oil in a medium saucepan over medium heat.
Add onion and bell pepper and cook until softened, about 5 minutes.
Stir in garlic, cumin, coriander, salt, and pepper. Cook for 1 minute more.
Add quinoa and stir to combine.
Add 1 1/2 cups water or vegetable broth.
Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until quinoa is cooked through and liquid is absorbed.
Remove from heat and let stand for 5 minutes before serving.
