Ingredients
  • 1 package (10 ounces) frozen spinach, thawed and squeezed dry
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup olive oil
  • 1 (14 ounce) package frozen phyllo dough, thawed
Instructions
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large bowl, combine the spinach, feta cheese, parsley, dill, salt, and pepper.
  3. Brush a 9x13 inch baking dish with olive oil.
  4. Unroll the phyllo dough and cut it into 12 equal rectangles.
  5. Place a heaping tablespoon of the spinach mixture in the center of each rectangle.
  6. Fold the two long sides of the rectangle over the filling, and then roll up the rectangle from the short end.
  7. Place the rolls in the prepared baking dish and brush with the remaining olive oil.
  8. Bake for 20-25 minutes, or until golden brown.
