Spanakopita (Spinach and Feta Pie)

Ingredients
  • 1 package (1 pound) frozen spinach, thawed and squeezed dry
  • 1/2 cup chopped onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • 1/2 cup crumbled feta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 1 package (1 pound) phyllo dough, thawed
Instructions
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large bowl, combine the spinach, onion, parsley, dill, feta cheese, Parmesan cheese, and olive oil.
  3. Season with salt and pepper, to taste.
  4. Unfold the phyllo dough and lay out one sheet on a lightly greased baking sheet.
  5. Spread 1/4 of the spinach mixture over the phyllo dough.
  6. Repeat with the remaining phyllo dough and spinach mixture.
  7. Bake for 25-30 minutes, or until the phyllo dough is golden brown and the spinach mixture is heated through.
  8. Let cool for a few minutes before slicing and serving.
