This recipe was inspired by a trip to Italy that I took a few years ago. I was staying in a small town in Tuscany, and I had the opportunity to eat at a local trattoria. One of the dishes that I ordered was a simple angel hair pasta with lemon and herbs. It was so delicious that I knew I had to recreate it at home. I've been making this dish ever since, and it's become one of my favorite weeknight meals.

Why It Works
  • The angel hair pasta is cooked in a large pot of salted water, which helps to extract the starch from the pasta and make it more flavorful.
  • The lemon and herb dressing is made with olive oil, lemon juice, oregano, basil, salt, and pepper. The olive oil adds richness and flavor, the lemon juice adds brightness and acidity, and the oregano and basil add a touch of freshness.
  • The grilled chicken is cooked over medium heat until it is cooked through. This helps to keep the chicken moist and flavorful.
