Ingredients
  • 1 cup quinoa
  • 1 cup chopped onion
  • 1 cup chopped green bell pepper
  • 1 cup chopped red bell pepper
  • 1/2 cup chopped sun-dried tomatoes
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
Instructions
  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. In a large bowl, combine the quinoa, onion, green bell pepper, red bell pepper, sun-dried tomatoes, parsley, mint, oregano, and salt. Stir until well combined.
  3. Spread the quinoa mixture onto the grape leaves. Roll up the grape leaves tightly, and place them in a baking dish. Pour the chicken broth over the dolmas.
  4. Bake the dolmas for 20-25 minutes, or until the quinoa is cooked through.
