Litti chokha is a traditional dish from the Indian state of Bihar. It is believed to have originated in the city of Kanpur, which is located in the eastern part of the state. The dish is said to have been created by a group of laborers who were working on the construction of a railway line. The laborers were from a poor village and they could not afford to eat expensive food. They came up with the idea of making a dish that was both filling and affordable. They used locally available ingredients such as whole wheat flour, sattu flour, ghee, potatoes, brinjals, tomatoes, green chilies, and mustard oil. The dish was a hit with the laborers and it soon became popular throughout the state of Bihar.
