Roasted Pepper and Sausage Tortellini

Ingredients
  • 1 pound tortellini
  • 1 red bell pepper, roasted and chopped
  • 1 yellow bell pepper, roasted and chopped
  • 1/2 pound Italian sausage
  • 1/4 cup olive oil
  • 1/4 cup chopped onion
  • 1/4 cup chopped garlic
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Roast bell peppers for 20 minutes, or until softened.
  3. Remove peppers from oven and let cool.
  4. Cook tortellini according to package directions.
  5. While the tortellini is cooking, brown sausage in a large skillet over medium heat. Remove sausage from skillet and set aside.
  6. Add olive oil, onion, garlic, oregano, salt, and pepper to the skillet. Cook for 5 minutes, or until softened.
  7. Add roasted peppers and sausage to the skillet. Cook for 5 minutes, or until heated through.
  8. Drain tortellini and add to the skillet. Stir to combine.
