Ingredients
  • 1 cup mixed berries (such as strawberries, blueberries, raspberries)
  • 1 can full-fat coconut milk
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
Instructions
  1. In a blender, puree the mixed berries until smooth.
  2. In a separate bowl, whisk together the coconut milk, honey or maple syrup, and vanilla extract.
  3. Pour the coconut milk mixture into ice pop molds, filling them halfway.
  4. Add a layer of the berry puree on top of the coconut milk mixture in each mold.
  5. Insert ice pop sticks and freeze for at least 4 hours, or until firm.
  6. To unmold, run the ice pop molds under warm water for a few seconds to loosen.
  7. Enjoy these delicious paleo-friendly ice pops on a hot day!
