These refreshing ice pops combine the sweetness of berries with the creaminess of coconut milk, making them a perfect treat for those following a paleo diet.

Ingredients
1 cup mixed berries (such as strawberries, blueberries, raspberries)
1 can full-fat coconut milk
2 tablespoons honey or maple syrup
1 teaspoon vanilla extract
Instructions
In a blender, puree the mixed berries until smooth.
In a separate bowl, whisk together the coconut milk, honey or maple syrup, and vanilla extract.
Pour the coconut milk mixture into ice pop molds, filling them halfway.
Add a layer of the berry puree on top of the coconut milk mixture in each mold.
Insert ice pop sticks and freeze for at least 4 hours, or until firm.
To unmold, run the ice pop molds under warm water for a few seconds to loosen.
