1 1/2 cups (180g) all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup (1 stick; 113g) unsalted butter, cold and cut into small pieces
1/2 cup (120ml) buttermilk
1 cup (120g) shredded sharp cheddar cheese
1 tablespoon chopped fresh herbs (such as thyme, rosemary, or chives)
Instructions
Preheat oven to 375°F (190°C).
In a large bowl, whisk together the flour, baking powder, and salt.
Use your fingers to work the butter into the flour mixture until it resembles coarse crumbs.
Stir in the buttermilk, cheddar cheese, and herbs.
Turn the dough out onto a lightly floured surface and knead for a few minutes until it comes together.
Roll out the dough to a thickness of about 1/4 inch.
Use a cookie cutter or a sharp knife to cut out the crackers.
Place the crackers on a baking sheet lined with parchment paper.
