Mirchi Vada is a popular Indian street food that consists of a flavorful potato filling stuffed inside slit green chilies, then coated in a crispy batter and fried until golden brown. These bite-sized snacks are often served with a tangy green chutney for dipping, making them a perfect appetizer or side dish.
The origins of Mirchi Vada can be traced back to the kitchens of Rajasthan, a state in northern India known for its spicy and flavorful cuisine. It is believed that this dish was created as a way to use up leftover potatoes and green chilies from other meals. Over time, Mirchi Vada gained popularity beyond Rajasthan and became a beloved street food all across India.

Why It Works
Slitting the green chilies lengthwise and removing the seeds allows for maximum stuffing and ensures an even distribution of flavors.
Mashed potatoes provide a soft and creamy base for the filling, while the addition of spices like red chili powder, coriander powder, and turmeric powder adds a burst of flavor.
Cumin seeds, mustard seeds, and fenugreek seeds contribute a warm, earthy aroma and subtle bitterness that complements the other ingredients.
Frying the chilies in hot oil creates a crispy exterior that contrasts with the soft and flavorful interior, resulting in an irresistible combination of textures.
