Ladakh Thukpa Feast
This hearty Tibetan-influenced soup will keep you warm and satisfied all winter long.

Ingredients
  • 1 tablespoon coconut oil or sesame oil
  • 1 medium yellow onion, chopped
  • 4 garlic cloves, minced
  • 1 teaspoon grated fresh ginger
  • 1 can (28 ounces) diced tomatoes
  • 1/2 cup vegetable broth
  • 1 (15 ounce) can chickpeas, drained and rinsed
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn
  • 1 cup frozen spinach
Instructions
  1. Heat oil in a large pot over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Add garlic and ginger and cook for 1 minute more.
  4. Add tomatoes, vegetable broth, chickpeas, peas, corn, and spinach.
  5. Bring to a simmer and cook for 15 minutes, or until vegetables are heated through.
  6. Serve hot.
