Ladakh Thukpa Feast
This hearty Tibetan-influenced soup will keep you warm and satisfied all winter long.

Ingredients
- 1 tablespoon coconut oil or sesame oil
- 1 medium yellow onion, chopped
- 4 garlic cloves, minced
- 1 teaspoon grated fresh ginger
- 1 can (28 ounces) diced tomatoes
- 1/2 cup vegetable broth
- 1 (15 ounce) can chickpeas, drained and rinsed
- 1/2 cup frozen peas
- 1/2 cup frozen corn
- 1 cup frozen spinach
Instructions
- Heat oil in a large pot over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Add garlic and ginger and cook for 1 minute more.
- Add tomatoes, vegetable broth, chickpeas, peas, corn, and spinach.
- Bring to a simmer and cook for 15 minutes, or until vegetables are heated through.
- Serve hot.
