Achari Aloo Gobhi

Ingredients
- 1 tablespoon vegetable oil
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 teaspoon fennel seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon salt
- 1 pound potatoes, peeled and cubed
Instructions
- Heat the oil in a large skillet over medium heat.
- Add the cumin, mustard, and fennel seeds and cook until fragrant, about 30 seconds.
- Stir in the turmeric, chili powder, and salt.
- Add the potatoes and cook until browned on all sides.
- Add the cauliflower and cook until softened, about 10 minutes.
- Stir in the achar and cook until heated through.
