Masala Stuffed Aloo Tikkis are delicious, crispy potato patties filled with a flavorful stuffing of peas, carrots, and spices. They're a popular Indian street food that can be served as a snack or an appetizer.
aloo tikkis are widely believed to be a 19th-century innovation from the city of Kanpur in northern India. Potato, a vegetable introduced to India by the Portuguese in the 16th century, had become a staple food in the northern plains by the mid-1800s. So when street food vendors of the time began experimenting with mashed potatoes as a base for their fritters, it was only a matter of time before someone hit upon the idea of stuffing them with a flavorful mixture of vegetables and spices. The aloo tikki was born.
