If you don't have any cooked chickpeas on hand, you can easily make your own by soaking dried chickpeas overnight and then cooking them in a pot of water until they are tender. Once the chickpeas are cooked, you can drain them and rinse them before using them in this recipe.

Ingredients
  • 1 head of romaine lettuce
  • 1 cup cooked chickpeas
  • 2 tbsp olive oil
  • 1/4 cup nutritional yeast
  • 1/4 cup cashew butter
  • 1/4 cup lemon juice
  • 1 tbsp tahini
  • 1 tsp ground mustard
Instructions
  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. Toss the chickpeas with the olive oil and spread them on a baking sheet.
  3. Bake for 20 minutes, or until crispy.
  4. While the chickpeas are baking, make the dressing.
  5. In a blender, combine the nutritional yeast, cashew butter, lemon juice, tahini, and ground mustard.
  6. Blend until smooth.
  7. Add water as needed to reach desired consistency.
  8. Once the chickpeas are crispy, assemble the salad.
  9. Place the romaine lettuce in a bowl and top with the chickpeas and dressing.
