Chicken drumsticks are one of the most versatile cuts of chicken. They're relatively inexpensive, they're easy to cook, and they can be flavored in a variety of ways. One of our favorite ways to cook chicken drumsticks is to glaze them with a sweet and tangy balsamic reduction. The glaze adds a sticky, flavorful layer to the chicken, while the crispy skin adds a satisfying crunch. This recipe is a bit of a riff on the classic Italian dish pollo al balsamico. We've used a combination of balsamic vinegar, coconut aminos, garlic, and rosemary to create a glaze that's both complex and delicious. The coconut aminos add a touch of sweetness and umami, while the garlic and rosemary add depth and flavor. The result is a dish that's both easy to make and sure to impress your guests.

Why It Works
  • The combination of balsamic vinegar, coconut aminos, garlic, and rosemary creates a complex and flavorful glaze.
  • The glaze is reduced until it's thick and sticky, which helps it adhere to the chicken.
  • The chicken is browned on all sides before it's glazed, which helps to create a crispy skin.
  • The chicken is baked until it's cooked through and the glaze is caramelized.
  • The chicken is rested before it's served, which allows the juices to redistribute throughout the meat.
