Spicy Black Bean and Sweet Potato Burrito

Ingredients
  • 1 medium sweet potato, peeled and diced
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons taco seasoning
  • 1/4 cup water
  • 6 (10-inch) whole-wheat tortillas
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Place the sweet potato on a baking sheet and roast for 20-25 minutes, or until tender.
  3. While the sweet potato is roasting, heat the olive oil in a large skillet over medium heat.
  4. Add the onion and bell pepper and cook for 5-7 minutes, or until softened.
  5. Add the black beans, taco seasoning, and water to the skillet and stir to combine.
  6. Bring to a simmer and cook for 10-12 minutes, or until the black beans are heated through.
  7. Once the sweet potato is roasted, mash it with a fork or potato masher.
  8. To assemble the burritos, spread some mashed sweet potato down the center of each tortilla.
  9. Top with the black bean mixture, and any other desired toppings such as salsa, guacamole, or sour cream.
  10. Wrap the burritos tightly and enjoy!
