Spicy Black Bean and Sweet Potato Burrito
A satisfying and flavorful vegan burrito that's perfect for lunch or dinner.

Ingredients
- 1 medium sweet potato, peeled and diced
- 1 (15 ounce) can black beans, rinsed and drained
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- 1/4 cup chopped fresh cilantro
- 2 tablespoons taco seasoning
- 1/4 cup water
- 6 (10-inch) whole-wheat tortillas
Instructions
- Preheat oven to 400 degrees F (200 degrees C).
- Place the sweet potato on a baking sheet and roast for 20-25 minutes, or until tender.
- While the sweet potato is roasting, heat the olive oil in a large skillet over medium heat.
- Add the onion and bell pepper and cook for 5-7 minutes, or until softened.
- Add the black beans, taco seasoning, and water to the skillet and stir to combine.
- Bring to a simmer and cook for 10-12 minutes, or until the black beans are heated through.
- Once the sweet potato is roasted, mash it with a fork or potato masher.
- To assemble the burritos, spread some mashed sweet potato down the center of each tortilla.
- Top with the black bean mixture, and any other desired toppings such as salsa, guacamole, or sour cream.
- Wrap the burritos tightly and enjoy!
