Ingredients
  • 1 cup quinoa
  • 6 cups vegetable broth
  • 1 teaspoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 cup chopped broccoli
  • 1 cup chopped cauliflower
  • 1 cup chopped zucchini
  • 1/4 cup chopped fresh parsley
Instructions
  1. Rinse the quinoa in a fine-mesh sieve.
  2. Heat the olive oil in a large pot or Dutch oven over medium-high heat.
  3. Add the onion, carrots, and celery and cook until softened, about 5 minutes.
  4. Add the broccoli, cauliflower, and zucchini and cook for 5 minutes more.
  5. Stir in the quinoa and vegetable broth.
  6. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  7. Remove from heat and stir in the parsley.
  8. Serve hot.
