Vegetable-Filled Tostadas
These tostadas are a colorful and flavorful way to get your daily dose of vegetables. They're also a great way to use up leftover veggies.

Ingredients
- 12 corn tortillas
- 1 cup black beans, cooked and mashed
- 1 cup corn kernels
- 1 cup chopped tomatoes
- 1 cup chopped bell peppers
- 1 cup chopped onions
- 1 cup shredded cheese
- 1/2 cup salsa
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- Place tortillas on a baking sheet and bake for 10-12 minutes, or until golden brown.
- Spread mashed black beans over tortillas.
- Top with corn kernels, tomatoes, bell peppers, onions, cheese, and salsa.
- Bake for an additional 10 minutes, or until cheese is melted and bubbly.
