These tostadas are a colorful and flavorful way to get your daily dose of vegetables. They're also a great way to use up leftover veggies.

Ingredients
  • 12 corn tortillas
  • 1 cup black beans, cooked and mashed
  • 1 cup corn kernels
  • 1 cup chopped tomatoes
  • 1 cup chopped bell peppers
  • 1 cup chopped onions
  • 1 cup shredded cheese
  • 1/2 cup salsa
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Place tortillas on a baking sheet and bake for 10-12 minutes, or until golden brown.
  3. Spread mashed black beans over tortillas.
  4. Top with corn kernels, tomatoes, bell peppers, onions, cheese, and salsa.
  5. Bake for an additional 10 minutes, or until cheese is melted and bubbly.
