Ingredients
  • 1 head of cauliflower
  • 2 tbsp olive oil

  • 1/4 cup vegetable broth
  • 1/2 cup pecans, chopped
  • Salt and pepper to taste
  • Fresh parsley for garnish
Instructions
  1. Rice the cauliflower by pulsing in a food processor until it resembles rice grains.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add onions and garlic, sauté until softened.
  4. Add cauliflower rice, cumin, coriander, salt, and pepper. Cook for 5 minutes.
  5. Stir in vegetable broth and cook until cauliflower is tender.
  6. In a separate pan, toast pecans until fragrant.
  7. Mix toasted pecans into the cauliflower rice pilaf.
  8. Serve garnished with fresh parsley.
