Ingredients
  • 1 medium butternut squash, peeled and cubed
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh sage
  • 1/4 cup pomegranate seeds
  • 1/4 cup chopped walnuts (optional)
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Toss butternut squash with olive oil, salt, and pepper.
  3. Spread squash on a baking sheet and roast for 20-25 minutes, or until tender.
  4. Transfer squash to a blender or food processor and purée until smooth.
  5. Transfer purée to a serving bowl.
  6. Top with crispy sage and pomegranate seeds.
  7. Serve immediately.
