Pomegranate and Quinoa Salad

Ingredients
  • 1 cup quinoa, cooked and cooled
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped red onion
  • 1/2 cup chopped green bell pepper
  • 1/2 cup canned corn, drained
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup halved fresh strawberries
  • 1/2 cup fresh orange segments
Instructions
  1. In a large bowl, combine the quinoa, cucumber, red onion, green bell pepper, corn, cilantro, strawberries, and orange segments.
  2. Whisk together the olive oil, lime juice, honey, and cumin in a small bowl.
  3. Pour the dressing over the salad and toss to coat.
  4. Refrigerate for at least 30 minutes before serving.
  5. Serve chilled.
