Ingredients

Instructions
  1. Heat the olive oil in a large pot over medium heat.
  2. Add the garlic and onion and cook until softened.
  3. Add the roasted red peppers and vegetable broth and bring to a boil.
  4. Reduce heat and simmer for 15 minutes.
  5. Add the chickpeas and vegan sour cream and simmer for 5 minutes more.
