Ingredients
  • Extra firm tofu
  • Tamari
  • Maple syrup
  • Rice vinegar
  • Garlic
  • Ginger
  • Broccoli florets
  • Carrots
Instructions
  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, whisk together tamari, maple syrup, rice vinegar, garlic and ginger. Add tofu to bowl and ensure it's well-coated in the marinade.
  3. Toss broccoli florets and carrots with olive oil, salt and pepper. Spread vegetables onto a baking sheet and roast for 15-20 minutes, or until tender.
  4. Meanwhile, heat a pan over medium heat. Remove tofu from marinade and pan-fry for 5-7 minutes per side, or until golden brown.
  5. Assemble bowls with rice, vegetables, tofu, and drizzle with remaining marinade as desired.
