Ingredients
  • Pizza dough
  • Red onion
  • Zucchini
  • Bell pepper
  • Eggplant
  • Pesto sauce
  • Mozzarella (or vegan alternative)
  • Salt & pepper
Instructions
  1. Preheat oven to highest temperature (usually 550F/290C)
  2. Grill or pan-grill vegetables, sliced into thin strips
  3. Roll out pizza dough into desired thickness and form
  4. Top with pesto sauce
  5. Add grilled vegetables
  6. Top with cheese
  7. Season with salt & pepper
  8. Bake in oven for 10-12 minutes, or until crust is golden
