Vietnamese Pho Noodle Pizza

We skip the heavy tomato sauce and mozzarella common to the Neapolitan prototype in favor of a more Vietnamese flavor profile, featuring a quartet of fresh herbs and hoisin sauce.
The idea for pho noodle pizza came to me in a dream. I was wandering through a rice paddy in the Mekong Delta when I saw a vision of a crispy, chewy pizza made with rice noodles. I awoke with a start, and the next day I was in the kitchen, experimenting with different ways to make this dream a reality.After many failed attempts, I finally stumbled upon the perfect combination of ingredients and techniques. The result is a pizza that is both crispy and chewy, with a delicious Vietnamese flavor profile.

Ingredients
  • 1 package (8 ounces) Vietnamese rice noodles
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped onion
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped fresh basil
  • 1/4 cup hoisin sauce
  • 2 tablespoons soy sauce
Instructions
  1. Preheat oven to 425 degrees F (218 degrees C).
  2. Cook rice noodles according to package directions.
  3. Drain noodles and rinse with cold water.
  4. Spread noodles out on a large baking sheet.
  5. Top with green bell pepper, red bell pepper, onion, cilantro, basil, hoisin sauce, and soy sauce.
  6. Bake for 10-12 minutes, or until noodles are heated through and slightly crispy.
  7. Serve immediately.
