Papaya and Coconut Chia Pudding

Ingredients
  • 1 cup frozen papaya
  • 1/2 cup coconut milk
  • 1/4 cup chia seeds
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon honey or maple syrup
  • Pinch of salt
  • Coconut shavings, for garnish
  • Mango slices, for garnish
Instructions
  1. In a medium bowl, combine the papaya, coconut milk, chia seeds, vanilla extract, honey or maple syrup, and salt.
  2. Stir until well combined.
  3. Cover the bowl and refrigerate for at least 4 hours, or overnight.
  4. Once the pudding has set, top with coconut shavings and mango slices.
