Ingredients
1 pound beets, peeled and cubed
2 tablespoons olive oil
1 teaspoon dried thyme

1/2 cup crumbled goat cheese
1/4 cup chopped walnuts
1 tablespoon chopped fresh parsley
Instructions
Preheat oven to 400 degrees F (200 degrees C).
Toss the beets with the olive oil, thyme, salt, and pepper in a large bowl.
Spread the beets on a baking sheet and roast in the preheated oven for 20-25 minutes, or until tender.
