Ingredients
  • 1 pound beets, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup crumbled goat cheese
  • 1/4 cup chopped walnuts
  • 1 tablespoon chopped fresh parsley
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Toss the beets with the olive oil, thyme, salt, and pepper in a large bowl.
  3. Spread the beets on a baking sheet and roast in the preheated oven for 20-25 minutes, or until tender.
  4. Let the beets cool slightly, then add the goat cheese, walnuts, and parsley to the bowl.
  5. Toss to combine and serve.
