  • Dairy-free sour cream
Instructions
  1. Cook quinoa and black beans according to package directions.
  2. Roast sweet potato until tender.
  3. Sauté bell pepper and onion until softened.
  4. Mash avocado and mix with dairy-free sour cream.
  5. Assemble burritos by placing a tortilla on a plate and spreading with avocado mixture.
  6. Top with cooked quinoa, black beans, sweet potato, bell pepper, and onion.
