Ingredients
  • 1 cup Bomba or Valencia rice
  • 1 tablespoon olive oil
  • 1/2 onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 cup chopped zucchini
  • 1 cup chopped broccoli
  • 1/2 cup chopped carrots
  • 1/4 cup chopped peas
Instructions
  1. Heat the oil in a large saucepan over medium heat.
  2. Add the onion and cook until softened.
  3. Add the bell peppers and cook until softened.
  4. Add the remaining vegetables and cook for 5 minutes.
  5. Add the rice and stir to coat in the oil.
  6. Add 2 cups of water and bring to a boil.
  7. Reduce heat to low, cover and simmer for 18 minutes.
  8. Remove from heat and let stand for 5 minutes before serving.
