Spiced Chickpea and Sweet Potato Burrito Bowls

Ingredients
  • 1 cup cooked chickpeas
  • 1 medium sweet potato, peeled and cubed
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon chili powder
  • 1/4 cup chopped red onion
  • 1/4 cup chopped cilantro
  • Brown rice or quinoa, for serving
  • Optional toppings: guacamole, salsa, sour cream, cheese
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Toss sweet potato cubes with olive oil, cumin, coriander, and chili powder.
  3. Spread sweet potato cubes on a baking sheet and roast for 20-25 minutes, or until tender and browned.
  4. While the sweet potatoes are roasting, heat a skillet over medium heat.
  5. Add chickpeas and cook for 5-7 minutes, or until heated through.
  6. To assemble the burrito bowls, place brown rice or quinoa in a bowl.
  7. Top with roasted sweet potatoes, chickpeas, red onion, and cilantro.
