Ingredients
12 artichokes
1 cup bread crumbs
1/2 cup grated Parmesan cheese
1/4 cup olive oil
1/4 cup chopped fresh parsley
1/4 cup chopped fresh mint
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat oven to 375 degrees F (190 degrees C).
Cut off the stems of the artichokes and trim the leaves. Use a spoon to scoop out the fuzzy choke from the center of each artichoke.
In a bowl, combine the bread crumbs, Parmesan cheese, olive oil, parsley, mint, salt, and pepper.
Fill the artichokes with the stuffing.
Place the artichokes in a baking dish and add 1/2 inch of water to the bottom of the dish.
Bake for 30-35 minutes, or until the artichokes are tender and the stuffing is golden brown.
Serve warm.
