Ingredients
1 head of kale, chopped
1 (15 ounce) can of chickpeas, rinsed and drained
1/2 cup chopped red onion
1/4 cup chopped fresh parsley
1/4 cup chopped fresh mint
1/4 cup olive oil
2 tablespoons lemon juice
2 tablespoons tahini
Instructions
In a large bowl, combine the kale, chickpeas, red onion, parsley, and mint.
In a small bowl, whisk together the olive oil, lemon juice, and tahini.
Pour the dressing over the salad and toss to coat.
