Bison and Kale Breakfast Skillet
This Bison and Kale Breakfast Skillet is a hearty and flavorful dish that is perfect for a weekend brunch or a quick and easy weeknight meal. The ground bison is cooked until browned, then combined with sautéed onion, garlic, and bell pepper. Kale is added to the skillet and cooked until wilted, and the mixture is seasoned with paprika, cumin, salt, and pepper. Four wells are made in the mixture and an egg is cracked into each well. The skillet is covered and the eggs are cooked until they are done to your liking. The dish is then sprinkled with fresh parsley before serving.

Ingredients
  • 1 lb ground bison
  • 1 bunch kale, stems removed and chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 tsp paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 4 eggs
  • Fresh parsley, chopped (for garnish)
Instructions
  1. In a skillet over medium heat, cook the ground bison until browned.
  2. Add the onion, garlic, and bell pepper to the skillet. Cook until vegetables are softened.
  3. Stir in the kale, paprika, cumin, salt, and pepper. Cook until kale is wilted.
  4. Make 4 wells in the mixture and crack an egg into each well.
  5. Cover the skillet and cook until the eggs are done to your liking.
  6. Sprinkle with fresh parsley before serving.
