Ingredients
  • 1 can (13.5 oz) full-fat coconut milk
  • 1/4 cup chia seeds
  • 1-2 tablespoons honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • Fresh berries, for serving
  • Shredded coconut, for garnish
Instructions
  1. In a bowl, mix together coconut milk, chia seeds, honey or maple syrup, and vanilla extract.
  2. Cover and refrigerate for at least 4 hours or overnight, until the chia seeds have absorbed the liquid and the mixture has thickened.
  3. Stir the pudding before serving to distribute the chia seeds evenly.
  4. Divide the pudding into serving cups, and top with fresh berries and shredded coconut.
  5. Enjoy chilled!
