1/2 cup chopped onion
1/2 cup chopped green bell pepper
1/2 cup chopped red bell pepper
1/2 cup chopped zucchini
1/2 cup chopped yellow squash
1/4 cup olive oil
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions

Line a baking sheet with parchment paper.
Place the sea bass fillets on the prepared baking sheet.
In a small bowl, combine the onion, green bell pepper, red bell pepper, zucchini, yellow squash, olive oil, oregano, salt, and pepper.
Spread the vegetable mixture over the sea bass fillets.
Bake for 15-20 minutes, or until the sea bass is cooked through and the vegetables are tender.
Serve immediately.
Why It Works
The sea bass is cooked in a parchment packet, which helps to keep it moist and flavorful.
The vegetables are roasted in the same packet as the sea bass, which allows them to absorb the flavors of the fish and the olive oil.
The oregano, salt, and pepper add flavor to the dish.
This dish is a healthy and light meal that is perfect for a summer dinner.
