Cauliflower Breakfast Hash

The cauliflower breakfast hash was born out of a need for a quick and easy way to get my morning veggies. I'm always looking for new ways to eat cauliflower, and I thought that a hash would be a great way to use up some of the cauliflower that I had in my fridge. I started by grating the cauliflower and then sautéing it in a pan with some olive oil, onion, and bell pepper. I added some garlic, paprika, cumin, turmeric, salt, and pepper, and cooked the cauliflower until it was tender and slightly browned. Then, I made 4 wells in the cauliflower mixture and cracked an egg into each well. I covered the pan and cooked the eggs until they were done to my liking. The cauliflower breakfast hash was a hit! It was quick and easy to make, and it was a delicious and healthy way to start my day.

Ingredients
1 medium head cauliflower, grated
1 red bell pepper, diced
1 small onion, chopped
2 cloves garlic, minced
2 tbsp olive oil
1 tsp paprika
1/2 tsp cumin
1/2 tsp turmeric
Salt and pepper to taste
4 eggs
Instructions
In a large skillet, heat olive oil over medium heat.
Add onion and bell pepper, sauté until softened.
Add garlic, cauliflower, paprika, cumin, turmeric, salt, and pepper.
Cook until cauliflower is tender and slightly browned, about 10-15 minutes.
Make 4 wells in the cauliflower mixture and crack an egg into each well.
Cover and cook until eggs are done to your liking.
Serve hot and enjoy!
