Mediterranean Veggie Burger with Tzatziki
This veggie burger is inspired by the flavors of the Mediterranean, and it's packed with protein and fiber. It's also easy to make, and it can be served with a variety of toppings. Start by cooking the black beans and quinoa. Once they're cooked, combine them in a large bowl with the zucchini, red bell pepper, onion, egg (if using), olive oil, and cumin. Form the mixture into 4 patties and cook them in a skillet until they're golden brown. Transfer the patties to a baking sheet and bake them for 10 minutes, or until they're cooked through. Serve the burgers with tzatziki sauce.
I've always been a fan of veggie burgers, but I've never been able to find one that I really love. They're often too dry, or they don't have enough flavor. I decided to create my own veggie burger recipe, and I'm so glad I did. This burger is moist and flavorful, and it's packed with protein and fiber. It's also easy to make, and it can be served with a variety of toppings. I like to serve it with tzatziki sauce, but you can also use your favorite burger toppings. I hope you enjoy this recipe as much as I do!
